COOKIES


Here are some of our favorite coffee-dippin' cookies. As a kid I can remember going to my great-grandmother's house after church on Sunday and dipping cookies into coffee. Those are nice memories, hope these cookies bring back nice memories for you. A.P. cookies/cakes are very popular in Berks County. You can't go to a church bake sale without running into one.

Good Coffee Cookies

Mix together:
3 c. light brown sugar
1 c. soft margarine

Add:
3 well beaten eggs
1 c. sour cream
1 tsp. vanilla
1/2 tsp. salt
6 c. flour
1 tsp. baking soda

Make a soft dough and chill for about 1 hour.

Take small lumps, roll in the palm of your hand and press onto a cookie sheet into about 1/4 inch round.

Bake at 350 degrees for 15-18 minutes.
They may be frosted with a glaze-like frosting, but are good without.

A.P. COOKIES

Mix together:
3 c. flour
1 1/2 tsp. baking soda
1 1/2 c. light brown sugar
1/4 tsp. cinnamon
1/4 tsp. salt

Add and mix well:
1 stick of soft margarine

Add:
1/2 c. milk
1 tsp. vanilla

Mix together to make a soft dough.

Take small lumps and roll in the palm of your hand, press onto a cookie sheet into about 1/4 inch rounds.

Bake at 350 degrees for about 12-15 minutes.
Excellent for dipping into coffee or milk!

Applesauce Spice Cookies

Mix together

Add:

Mix well and drop by tsp. onto cookie sheet. Bake at 350 degrees for 15 minutes.


Crazy Cookies

Mix together and form into small balls, flatten and put a half of a nut (pecan, walnut) on top of each. Bake at 350 degrees for 8-10 minutes.


Pecan Crisps

Mix into a soft dough, chill. Form into small balls and press flat with bottom of glass or spatula. Bake at 350 degrees for 10 minutes.
