Potato Filling
Potatoes, onions,bread cubes,2 eggs.
Cook as many potatoes as you need [5lbs will feed 8 hungry people] and then mash the potatoes. Fry 4 large onions which have been chopped fine in butter. When onions are soft add same amount of bread which have been torn into small cubes and allow bread to soften. Add the onion and bread mixture to mashed potatoes add 2 eggs salt,pepper and moisten with milk.
Put into a buttered dish, dot with butter,bake at 375 until brown. 35 to 40 minutes.
Another Filling Recipe
Boil potatoes, mash and set aside. In a large saute pan, melt butter and saute onion and celery until almost soft. Add the bread cubes and cook until vegetables are done. If you want add a bit more butter, the filling is really good with buttery bread cubes. Add bread, onion and celery and parsley to mashed potatoes and mix well. You don't want the chunks of bread or vegetables to be too big. I use a stand-up mixer and everything mixes to a pretty fine consistency. While everything is hot, add the egg and mix well. My grandmother added the egg, I do not. Sometimes for a different flavor, I throw a peeled clove of garlic or two into the potatoes as they boil. It gets mashed up, and enhances the flavor. It is not original to the dish.
Potato Filling
This potato filling recipe was sent to me by Arlean. This one you can use to stuff inside a turkey or chicken. It looks pretty easy and can probably be made a day ahead of the main meal. Thanks Arlean!
Peel the potatoes and boil in salted water.
In the meantime melt butter in a pan and add chopped onions. Saute the onions until very dark. (The darker the onions the better the taste, but do not burn them)
Break up bread into pieces and moisten with milk.
When the potatoes are done, drain and mash with an electric mixer adding pepper, parsley, the browned onions, bread crumbs and eggs. The number of eggs you use will depend on how many you need to moisten the potatoes for mashing. If you have a medium pot of potatoes use 3 eggs and if the pot is larger use four or even more if the pot is huge. Do not worry about lumps in the potatoes as long as they are not big.
The stuffing can be put into a turkey or chicken before it goes into the oven and if there is any that does not fit into the bird put it in an oven dish and heat through. (You want to be sure the egg cooks.) ·
