Macaroni Salad
Here's another version of macaroni salad that sounds good. It's from a
fellow "surfer" Linda. Thanks Linda, it sounds great. It has
a bit of a different twist than just plain old mac salad.
1 lb cooked elbow macaroni - cooled and drained with cold water.
add to macaroni:
1 or 2 cups chopped celery
1/2 cup chopped onion (to taste)
2 grated carrots
1 diced green pepper
1 small can peas (optional)
mix together for dressing and mix into salad mixture above:
2 cups mayo (I use fat free) with
1/2 cup sugar - then add
1/3 cup vinegar last
Lastly, I add 3 or 4 chopped hard boiled eggs.
