DRIED CORN (from a 1950's cookbook)
This recipe is from Mike, he looked it up for me. It's another version of Dried Corn. Thanks Mike.

·Katie sent me this recipe, it incorporates dried corn into a dish instead of using it by itself. I am working on a recipe for dried corn, but am unable to find one. If ANYONE has one, please send it to me and I'll post it immediately. Meanwhile, Copes Brand makes a fine dried corn, and that seems to be what most people who write to me use. STEWED DRIED CORN
If you have never had dried corn you really must give it a try. It goes back to the days when drying was used to preserve vegetables through the winter.
The dried corn has a rich, nutty flavor, very different from fresh. I was fortunate to have access to a large amount of fresh ears of corn years ago and dried a bunch in my dehydrator. It was great and lasted several years in an air-tight container. Alternately, there are dried corn products available. This recipe is for stewed corn, but it can also be baked or creamed.
Place corn in large saucepan. Add boiling water and soak approximately 1 hour. Add sugar, butter salt and pepper. Bring to a boil; reduce heat and simmer approximately 30 minutes. Add milk and cook for an additional 5 minutes. Taste for seasoning. Reheats very well.

DRIED CORN
Mix ingredients and put in kettle. Simmer stirring occasionally, till it is boiled dry. Then spread it in pans and dry in a slow oven or a commercial food dryer.

DRIED CORN PUDDING
Grind the dried corn in a food processor, pour on the hot milk and let stand for an hour. To the soaked corn add the eggs, milk, sugar and salt. Put into a greased baking dish and dot with butter. Bake 30 minutes at 350°F. Serves 6.
AU GRATIN POTATOES
Arrange potatoes in greased casserole dish. Saute onions and red peppers in butter. Add other ingredients and heat until cheese melts, stirring constantly. Pour over potatoes. Bake at 350 degrees for 45 minutes.
